Subaida is backed by three generations of creating artisan cheese. If there’s one thing we’v e learned after all these years, it’s that time is an essential ingredient in our cheeses.

Time brings flavor, texture, and color to each of our varieties. Our cheeses are left to age until they have fully matured. Some need only a few weeks, while others take years. Only then will they acquire their truly authentic flavors .

5 WEEKS:
SOFT CHEESE

WHAT IS ELVIS DOING ON A PACK OF ARTISAN SOFT CHEESE?

This soft cheese has been aged for 5 weeks, the same length of time that Elvis Presley’s “LOVE ME TENDER” ranked number one on America’s top hits.

And we at Subaida tenderly love our cheeses. We especially love our soft cheese: a spongy cheese with a milky color that, due to its short aging period, barely develops a rind. In sum: an easy-to-eat cheese with a creamy texture.

Cut a slice 1 cm thick, cook it on high for 30 seconds on each side, and it’ll bring tears to your eyes!

2-4 MONTHS:
SEMI-CURED CHEESE

WHY IS THERE A BEE ON THIS ARTISAN SEMI-CURED CHEESE?

This semi-cured cheese has been aged in a cellar for 3 months, the same as the lifespan of a male honey bee.

And we at Subaida love natural processes, so we appreciate the work of the drone bee, that indefatigable producer of honey. That’s why we use artisan methods to produce our cheeses, like our semi-cured cheese with its milky flavor and aroma and hints of sun-dried fruit.

5 - 9 MONTHS:
CURED CHEESE

WHY A BIRD, AND NOT A COW, ON THIS CURED CHEESE?

This cured cheese has been aged continuously for 6 months, the same length of time that the swift can remain in flight without stopping.

And we at Subaida, like the swifts, work tirelessly on our farm on Minorca to produce our cheeses, like our cured cheese with its intense flavor that lingers in the mouth. This cheese has the taste of aged wood, tradition, and cellars, the unique and uplifting flavor of Mahón.

WHAT DOES GOYA’S PAINTING HAVE TO DO WITH THIS ARTISAN AGED CHEESE?

This aged cheese has been matured using artisan methods for a year and a half, as long as it took Goya to paint "La familia de Carlos IV"

At Subaida we know that a masterpiece is not created in days, so we wait patiently for our cheeses to reach maturity. Our aged cheese is for lovers of intense flavors that coat the mouth, its yellow color and brittle texture the products of many months of aging and care in the cellar.

MEDITERRANEAN JAR

We at Subaida are firm believers in autarky, and we do everything possible to create our products using only the surrounding resources. Only then can we ensure that their flavor is unique. Our Mediterranean jar is a delicious example.

We use pieces of our cured cheese preserved in extra virgin olive oil and seasoned with chopped arbequina olives and a blend of Mediterranean herbs grown on our farm (basil, oregano, and rosemary).
